I have ordered 1kg of 100.000 u/g Chitinase from this supplier, they have sent me a powdered sugar. Real Chitinase never tastes like sugar. Chitinase is an enzyme that breaks down chitin, a substance found in the cell walls of fungi and the exoskeletons of insects. It is not a sugar and doesn't produce a sweet taste. Chitinase itself is an enzyme, not a sugar that elicits a sweet taste. It comes with a chalky texture and bitter or saltier taste hence they did add into some fillings because it is in very low activity, they are not giving me a third party COA and I dont trust their own one. I have wasted my time for this product so I need to go find an another supplier. Very disappointed.

Enzymatic products: When chitinase naturally degrades chitin (a polysaccharide composed of N-acetylglucosamine), it may produce N-acetylglucosamine (GlcNAc) or its oligomers. These products themselves have a sweet taste.I'm sorry, but after enzymatic degradation, sweetness will occur. If this doesn't meet your requirements, I apologize, but our product's activity is sufficient.
